SIMPLE Zesty Italian Paleo Salad Dressing Recipe

You know you are all grown up when you love a good salad. Paleo or not, half of what makes a great salad is the dressing and for us, store bought dressings aren’t good enough with their added chemical preservatives and sugary GMO corn syrups. Zesty Italian dressings have been my favorite recipes to whip up these past years due to their classical taste and simple preparation.

If you use high quality olive oil you will benefit from its anti-aging effects. The apple cider vinegar will strengthen your digestion, lower your blood sugar and promote weight loss.

This salad dressing will be good for 2 weeks refrigerated though it is best when made fresh.

Prep Time: 3 minutes


– 1/4 cup olive oil

– 3 tablespoons apple cider vinegar

– 1 or 2 cloves of finely minced garlic

– 1/2 teaspoon onion powder

– 1/2 teaspoon each of thyme, oregano and basil (try holy basil for anti-aging adaptogenic dressing)

– 1/2 teaspoon dijon mustard (can substitute with a pinch dry mustard powder)

– sea salt & black pepper to taste


–  Combine all ingredients in a jar and shake hard ’till mixed

Bonus Tip

Use this dressing as a zesty marinade for meat or cooked veggies!
